A quick and easy one-pot creamy mushroom pasta that is perfect for a cozy weeknight dinner or a weekend meal. The dish features a creamy sauce made with mushrooms, garlic, cream, and Parmesan cheese that coats the pasta perfectly and creates a wonderful flavor and texture.

Ingredients

  • 8 oz. whole wheat pasta

  • 1 tbsp. olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 8 oz. mushrooms, sliced

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh parsley, chopped for garnish

Directions

  • In a large pot, cook the whole wheat pasta according to package instructions until al dente.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.
  • Add the sliced mushrooms to the skillet and continue to cook for 5-7 minutes until they are tender and golden brown.
  • Reduce the heat to medium-low and pour the heavy cream into the skillet. Stir the cream until it begins to simmer.
  • Add the grated Parmesan cheese to the skillet and stir until the cheese has melted and the sauce is smooth.
  • Drain the pasta and add it to the skillet with the creamy mushroom sauce. Toss the pasta gently until it is well coated with the sauce.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

  • If you don’t have whole wheat pasta, regular pasta can be used instead.
  • For a healthier option, use Greek yogurt instead of heavy cream.
  • To make this recipe vegan, substitute the heavy cream and Parmesan cheese with coconut cream and nutritional yeast, respectively.
  • This recipe can be easily doubled or tripled to feed a larger crowd.
